1 1/2 Cups sugar
3/4 Cup brown sugar
1/2 Cup milk
6 Tablespoons butter
1 1/2 Cups pecans -- broken
1 Teaspoon vanilla extract
Before making candy, prepare several layers of newspaper and place on
a flat surface. Place a layer of wax paper on top of the newspaper.
The newspaper layers are important because the candy mixture will be
very hot.
Combine all ingredients except vanilla and bring to a boil. Cook to
soft ball stage (238-240 degrees) on a candy thermometer. Remove from
heat and stir in vanilla. Keep stirring until nuts no longer come to
the top of the mixture. Quickly drop by spoonfuls on prepared wax
paper. When cool, remove from wax paper and store.
