                                Potato Candy

    1      medium        potato -- do not peel
    1                    box 10X powdered sugar
                         Peanut butter
 
 Boil potato in jacket until fork tender.  Peel potato and mash in large bowl.  
 Add powdered sugar 1 cup at a time until a firm dough.  Roll between waxed pape
 r to 1/4″ thick.  Remove top layer of waxed paper.  Spread peanut butter on pot
 ato dough.  Roll jelly roll style.  Chill until well set. Slice into pretty pin
 wheel candies.
