Add milk slowly and cook over boiling water until mixture begins to thicken. Add well-beaten egg yolks and butter and cook until mixture thickens. Add lemon juice and cool. Arrange 1 cup sliced peaches in pie shell. Pour in filling and top with remaining peaches.
