* Exported from MasterCook * Peanut Butter Pie Recipe By : More Family Favorites Serving Size : 1 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Cup Confectioners Sugar 1/2 Cup Peanut Butter 2 Tablespoons Cornstarch 2/3 Cup Sugar Dash Salt 3 Cups Milk 3 Eggs -- Separated 1 Teaspoon Vanilla 1/2 Cup Sugar 1/4 Teaspoon Cream Of Tartar 9 Inch Gra Ham Cracker Or Baked Pie Shell Mix confectioners sugar and peanut butter until crumbly and set aside. Put cornstarch ,2/3 cup sugar, salt and milk in double boiler and cook until mixture thickens. Add small amount of hot mixture to slightly beaten egg yolks, then add egg mixture to sauce and add vanilla. Cook until thick again. Place half of peanut butter mixture in bottom of a 9″ pie crust. Pour fillilng over this. Beat egg whites with 1/2 cup sugar and cream of tartar. Spread over fillling and top with remaining peanut butter mixture.
