                           Greek Vegetable Jumble

    2      c             cooked cut green beans
    1      c             coarsely chopped tomatoes
    1      c             sliced zucchini
    1      sm            onion -- cut into rings
      1/2  c             ripe olives
      1/2  c             chopped green bell pepper
      2/3  c             bottled Italian dressing
    1      tbsp          chopped fresh mint or 1 tsp mint flakes
 
 In a 1 quart jar, layer bean, tomato, zucchini, onion, green pepper, and olives
 ; add Italian dressing blended with mint. Secure lid tightly and chill, turning
  jar occasionally, 4 hours or overnight.  Store in refrigerator for up to 1 wee
 k.  Makes about 4 cups relish.
