* Exported from MasterCook II * Melitzanokeftethes Kroketes (Eggplant Croquettes) Recipe By : Marie Serving Size : 1 Preparation Time :0:00 Categories : Vegetables Greek 1 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- eggplants cracker meal oil -- for frying THE MIXTURE 1 1/2 cups bread crumbs 2 each eggs 1/2 cup Kefalotiri cheese -- grated OR 1/2 cup Parmesan cheese -- grated 1 tablespoon baking powder 2 tablespoons parsley -- chopped 1 teaspoon onion -- chopped salt and pepper -- to taste Wash the eggplants and pierce in several places with a fork. Boil in lightly salted water until tender; drain well. Remove skin and mash the pulp; measure it. Mix 2 cups of eggplant pulp with the amount of ingredients listed above and blend well.
