                             Greek Lamb & Orzo

    1      pound         ground lamb (beef can be substituted)
    2      16 oz. cans   stewed tomatoes, undrained
    1      medium        celery stalk, cut into -- 1/2 inch pieces
    1      cup           uncooked orzo*
      1/4  teaspoon      salt
      1/4  teaspoon      ground red pepper
                         Plain yogurt -- Optional
 
 Cook lamb in a 10 skillet over medium high heat, stirring occasionally,
 until no longer pink; drain.  Stir in tomatoes, celery, orzo, salt and red
 pepper.  Heat to boiling; reduce heat.  Cover and simmer for about 12
 minutes, strring frequently, until tomato liquid is absorbed and orzo is
 tender.
 
 Serve with yogurt and pita breads
 
 * Orzo is rice shaped pasta
