       Title: Hearts of Palm and Zucchini Salad

       Yield: 4 Servings
       1 cn Hearts of palm (150z); drain
            -and dice
       1 cl Garlic
       2 tb Jalapeno vinegar*
     1/2 ts Salt
     1/2 ts Pepper
       6 tb Olive oil
       1 md Zucchini; diced
       1 md Tomato; diced
     1/2    Sweet onion; diced
   Combine all the ingredients and refrigerate for at
   least 2 hours. Spoon onto a bed of mixed lettuce.
   *Note: you can substitute the liquid from a jar of
   pickled jalapeno for the Jalapeno vinegar
