* Exported from MasterCook II * Carmel Apple Salad Recipe By : Sherry Swearngin-Lee’s Summit Journal 11/24/97 Serving Size : 1 Preparation Time :0:00 Categories : Desserts Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon flour 1/3 cup sugar 1 each egg 2 tablespoons apple cider vinegar 1 8 ounce can crushed pineapple -- drained and juice re 4 each red delicious apples-unpeeled -- cored and chopped 1 cup salted peanuts 1 8 ounce Cool Whip® Mix flour and sugar. Beat egg and add to flour and sugar. Mix well. Add vinegar and pineapple juice. Cook in a small pan over low heat stirring until thick. cool completely. (To speed along, I set it in a bowl in the fridge.) Meanwhile, combine apples, pineapple and peanuts. Pour cooled dressing over all. Fold in Cool Whip. Chill well.
