                                 Fried Okra

    2      quarts        okra
    4      tablespoons   fat
                         salt -- to taste
 
 Select young okra, wash it well, dry thoroughly, and cut crosswise in pieces ab
 out one-half inch thick.  Heat the fat in a heavy skillet, add the okra, cover,
  cook for 10 minutes, and stir frequently to prevent burning.  Remove the cover
 , continue to cook until the okra is tender and lightly brown, and serve at onc
 e.
