    2      packages      frozen chopped spinach -- cooked, drained
    6                    egg whites -- or 4 eggs
    1                    potato -- cooked and grated
    1      teaspoon      salt
    1/8    teaspoon      pepper
    2      cups          cottage cheese, lowfat -- or fat-free
 
 Mix all ingredients.  Put into oiled baking dish.  Bake at 350F for about 1
 hour, or until firm.
