Cookbook” Serving Size : 6 Preparation Time : Categories : Brunch Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup sugar 2 envelopes unflavored gelatin 1 1/2 cups water 2 large grapefruits -- up to 3 1/4 cup fresh lemon juice 1 drop red food coloring -- up to 2, optional 1) Combine the sugar and gelatin in a large nonreactive saucepan. Gradually stir in the water. 2) With a vegetable peeler, remove the rind from 2 of the grapefruits; you need 2 cups of juice. Add the grapefruit juice and the lemon juice to the saucepan. 3) Over low heat, stirring constantly, cook the mixture in the saucepan until it simmers and clarifies. This will take at least 5 minutes. Wehn the liquid is clear, strain it into a serving bowl, pressing down hard on the solids in the strainer so as to get the last drops of citrus elizir. Stir in the optional red food coloring, which will give the gelatin a gentle pinkish glow instead of a bleak yellowish pallor. 4) Chill the gelatin for several hours or overnight. Notes: The gelatin can be served in 4-6 serving dishes: strain the liquid into a large bowl, color it if you want, and then carefully pour it into the smaller dishes before Step 4.
