       Title: MUSTARD LIVER

       Yield: 4 servings
       1 lb Calf liver
     1/2 c  Bread crumbs
       1 ts Parsley, minced
       1 tb Mustard
       1 tb Onion, minced
       1 ea Garlic clove, minced
       1 tb Butter
       1 x  Salt
       1 x  Pepper
   Sprinkle liver with salt and pepper and broil each
   side once. Saute' onion and garlic in half the butter,
   lightly. Combine bread crumbs, mustard,parsley,onion
   and garlic in a bowl. Place liver in a shallow
   casserole and top with mixture. Add flakes of butter
   and broil until crumbs brown lightly.
