1 1/2 cups cooked chicken breast halves -- in 1/2″ cubes
2 navel oranges -- peeled & sectioned
2 ribs celery -- diced
2 green onions -- sliced
1/3 cup fat-free mayonnaise
1/4 teaspoon salt
1/8 teaspoon pepper
1 dash curry powder -- optional
lettuce leaves or watercress
Combine all ingredients in a bowl. Tumble about gently to combine. Serve on
lettuce leaves or watercress.
