                          MONASTERY HERBAL SAUSAGE

  400       g            Lean pork
  400       g            Lean beef
  200       g            Green pork back fat or fatty
                         Pork belly without skin
   20       g            Salt
    2                    Level tsps finely ground
                         White pepper
    1       t            Thyme
    1       t            Marjoram
    5                    Pieces pimento
    1                    Piece finely ground
                         Cinnamon
 
   Mince pork, beef and fat through 8mm disc. Mix herbs and spices and
   sprinkle over meat mass and mix all together by hand for 5-10 mins.
   Fit funnel to mixer and fill pork casings.  Twist into length of
