                                Veal Marsala

                         Marsala wine (about 1/2 to 1
                         Cutlets sliced thin
                         cup according to taste)
                         Flour for dredging
                         Thinly sliced mushrooms
                         Olive oil and butter (1/2
                         Fresh chopped parsley
 
 Heat oil and butter in pan until hot but not smoking. Coat cutlets on both sides
with flour and fry on both sides until crispy.Remove from frying pan and put on
warm platter and keep warm. In the drippings add mushrooms and saute for 5 min.
Turn heat down to a simmer and add marsala and parsley.
 Simmer 2 min. Stir well and add meat turning to coat both sides. Let simmer 10
min then serve hot.
