   Amount  Measure       Ingredient -- Preparation Method

    1      cup           water per pound of chicken
    2                    to 3 carrots
    3      ribs          celery
    1                    onion -- sliced
                         salt and pepper -- to taste
 
 Cook 45 to 60 minutes, depending on the age of the bird. Strain the stock; if y
 ou wish it to be fat-free, refrigerate the stock until it congeals; remove the 
 fat layer from the top. (It freezes beautifully as is).
 
 You now have stock and a cooked chicken or chickens. You can utilize them in a 
 variety of dishes to freeze or you can freeze them as is for later use.
