                         Individual Potato Puddings

   12      medium        potatoes
    2                    onions -- grated
    4                    eggs -- well beaten
    1      cup           flour
    1      tablespoon    salt
    1      teaspoon      baking powder
      1/2  teaspoon      pepper
    8      tablespoons   chicken fat or butter -- melted
 
 Peel and grate potatoes. Allow to drain. Discard liquid. Add onions and eggs to
  potatoes. 
 Mix together flour, salt, baking powder, and pepper and add to potatoes. Add ch
 icken fat or butter.
 
 Spoon into greased medium-sized muffin tins. Fill to top. Bake at 375 for 1 hou
 r, until brown and crusty. Allow to stand on counter a few minutes then run kni
 fe around edge to remove from pan. Freeze. To serve, reheat wrapped in foil in 
 350 oven.
