                       Roast Beef in Cumberland Sauce

   Amount  Measure       Ingredient -- Preparation Method

    2      jars          (10 oz each) currant jelly
    2                    egg yolks
      1/2  cup           raisins
    4      tablespoons   vinegar
    4      tablespoons   sugar
    1 1/2  teaspoons     dry mustard
                         salt and pepper -- to taste
    1 1/2  cups          (up to 2) cold roast beef
 
 Over hot water, stir currant jelly until soft. Beat in egg yolks, raisins, vine
 gar, sugar, dry mustard, salt and pepper.
 
 Stir the sauce, occasionally, until it thickens, about 15 minutes. Pour over co
 ld roast beef. 
 
 If desired, return the beef and the sauce to the double boiler or freeze in sau
 ce.
 
 To serve: Defrost and reheat in double boiler.
