                           Chicken Livers Risotto

      1/4  cup           olive oil
    1      cup           rice
    1      small         onion -- chopped
    2      cups          chicken stock
    1      clove         garlic -- crushed
                         salt -- to taste
           pinch         saffron
      1/4  teaspoon      powdered ginger
    1 1/2  pounds        chicken livers
      1/2  pound         mushrooms -- sliced thin
      1/4  cup           butter
      1/4  cup           parmesan cheese -- grated
                         black pepper -- coarsely ground
 
 Brown rice in olive oil, stirring constantly. Add onion, chicken stock, garlic,
  salt, saffron and powdered ginger. Cover pan tightly and simmer 20 minutes ove
 r low heat, until liquid is absorbed. Meanwhile quickly saute livers and mushro
 oms in butter. Add livers, mushrooms and pan juices to rice. Mix thoroughly. Fr
 eeze quickly. 
 
 To serve: Defrost at room temperature if you have time or by cooking in top of 
 double boiler; adjust seasonings. Sprinkle with parmesan cheese and black peppe
 r.
