      11 oz mandarin orange segments
       1 c  pistachio nuts
 
 place eye of round onto a rack in a roasting pan 
 roast @ 325 degrees for 60 minutes, or to desired doneness remove from
 oven, wrap in plastic, and chill thoroughly 
 cut slices to a thickness of 1/4-inch 
 garnish each with an orange segment and chopped pistachios serve slightly
 chilled or at room temperature
