GARLIC SPINACH BALLS

Amount Measure Ingredient -- Preparation Method

2 packages Frozen spinach
(cook -- drain and chop)
2 cups Stuffing mix -- herb seasoned
6 Eggs -- beaten
2 Onions -- finely chop
1/2 cup Chopped parsley
3/4 cup Margarine -- melted
1/2 cup Parmesan cheese
3/4 tablespoon Garlic powder
1/2 tablespoon Dried thyme
Black pepper -- to taste
Here is the first recipe I have tried from Andy Lo Russo’s new cookbook “SING
AND COOK ITALIAN”.
Mix all ingredients in large bowl, make small balls, and flash freeze. Then bak
e
in oven for 20 minutes at 375~.
These were really good BUT being the critic I am..
here are my suggestions for the recipe.
Next time I would use fresh garlic rather than powder. I prefer a garlic
“punch”. I also refrigerated these first before making balls, it was much
easier.
Not to totally desegregate Andy’s recipe...but I would add a shot of Tabasco.
Oh...these are vegetarian but BOY would they taste good eliminating the
margarine (I used butter) and adding Italian sausage.
