       Title: Oriental Shrimp Toast

       Yield: 40 Servings
  
       1    Scallion
       1 tb Ginger
       1 lb Shrimp, shld & deveined
       1    Egg
       1 ts Sherry
       1 ts Soy sauce
       2 ts Sesame oil
     1/2 ts Salt
            40 slices 1/4 thick, about
            2-3 ea French baguettes
  
   Chop scallion & ginger in a food processor. Add shrimp; process to a
 paste.
   Remove mixture to a bowl. Add egg, sherry, soy sauce, sesame oil and
 salt
   to paste; combine well. Top each slice of bread with 1 Tbs of mixture.
   Press it down gently so that it doesn't come off when frying.
    Heat wok on a high heat. Add 2 cups oil, heat oil to 350. Deep-fry a
 few
   toasts at a time, filling side down, for 30 sec. or until golden brown.
   Turn over, fry another 30 sec., remove and drain. From Wm.Henneman.
