                          Tuna And Caviar Parfait

   Amount  Measure       Ingredient -- Preparation Method

    4      ounces        fresh ahi tuna -- finely diced
    2      dashes        tabasco pepper sauce
    1      tablespoon    finely chopped chives
    1      teaspoon      olive oil
                         salt and pepper to taste
                         garnish:
    2      ounces        wasabi tobiko and/or osetra caviar
    1      tablespoon    whipped cream -- unsweetened
    8                    chives
 
 In a well chilled bowl, mix tuna, Tabasco pepper sauce, chives, olive
 oil, and salt and pepper together. In a parfait glass, alternate
 layers of tuna mixture, wasabi tobiko and osetra caviar. Top with
 whipped cream and two chives.
 
 Yield: 4 appetizer servings
