      title: oven jerky

   servings: 12
       1 lb boneless top round steak or 
     1/2 c  liquid smoke
       1 t  black pepper
       1 t  salt
     1/2 c  soy sauce
       1 t  red pepper flakes
 trim all fat from beef
 place into a freezer until firm 
 slice into thin strips 
 place into a large shallow bowl 
 combine remaining ingredients-mix well 
 pour over beef, weight down with a plate 
 cover and chill for 4-24 hours 
 drain well and pat dry with a clean towel 
 arrange onto a rack, in a single layer 
 place into a shallow baking pan 
 bake @ 250 degrees for 3-4 hours, until dry to the touch remove from oven
 and allow to air dry for 24 hours
 store into a tightly covered glass jar
 serve at room temperature
