      title: orange honey butter
   servings: 50
       3 lb unsalted butter
       8 lb honey
       2 lb light brown sugar
   1 1/2 t  cinnamon
     3/4 c  brandy
       2 t  lemon zest
     1/3 c  orange zest
 combine butter, honey, brown sugar, and cinnamon in a mixer bowl
 process at medium-low speed until well blended and fluffy
 add brandy, lemon zest, and orange zest-mix well
 spoon into a pastry bag, fitted with a large star tip
 pipe rosettes onto parchment or waxed paper
 chill until firm
 serve slightly chilled or at room temperature
