       6 c  seasoned rice vinegar
       4 c  water
       3 lb sugar
       2 c  plum sauce
     3/4 c  soy sauce
       2 t  fresh ginger root
       1 t  garlic puree
       1 t  sesame oil
 
 heat vinegar in a saucepan, over a moderate flame 
 add sugar and water, heat and stir to dissolve sugar remove from heat 
 stir in remaining ingredients-mix well 
 cover and chill for 4-48 hours 
 serve slightly chilled or at room temperature
