* Exported from MasterCook * NORWEGIAN RICE PUDDING Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : None Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 c Water 1/2 c Long-grain rice 1/2 ts Salt 4 c Milk 1/4 c Butter 2 Eggs 1/2 c Sugar 1 t Vanilla 1/2 c Raisins (Golden) Nutmeg Bring water, rice and salt to a boil and cook 7 minutes. Add milk and butter; bring to a boil. Reduce heat, cover and simmer for 1 to 1 1/4 hours. Beat eggs, sugar and vanilla and add to rice mixture. Remove from heat and add raisins. Turn into 13 x 9 pan and sprinkle with nutmeg. Cover with plastic wrap and chill. May also be served warm.
