* Exported from MasterCook * Citrus Bread Pudding Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Posted To Recipelu Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 3/4 cups nonfat milk 6 tablespoons egg substitute -- ( equivalent to 1 1/2 1 whole eggs) 6 tablespoons sugar 2 teaspoons vanilla 1 teaspoon grated orange peel 1 teaspoon grated lemon peel 1/2 teaspoon cinnamon 5 cups soft 3/4-inch french bread cubes 4 1/2 ounces diced -- pitted prunes 1 tablespoon margarine -- melted citrus sauce -- (recipe follows) In large bowl whisk milk, egg substitute, sugar, vanilla, peels and cinnamon; s tir in bread and prunes. Let stand at room temperature 45 minutes. Preheat oven to 350 degrees F. Stir margarine into bread mixture; spoon into 8-inch square baking dish coated with vegetable cooking spray. Bake at 45 minutes or until pi ck inserted into center comes out clean. Serve warm or at room temperature with warm Citrus Sauce. NOTES : Makes 6 servings; 282 calories per serving.
