                            Cream of Wine Sauce

      1/2  stick         butter
    2      tablespoons   flour
    1      pint          sour cream
    6      ounces        dry white wine
    1      can           cream of mushroom soup
      1/4  teaspoon      white pepper
      1/8  teaspoon      cayenne pepper
      1/8  teaspoon      dried oregano
      1/8  teaspoon      dried thyme
    2      teaspoons     grated Parmesan cheese
      1/2  cup           hot milk
      1/2  cup           hot water
 
 1. Melt butter at 400° in a deep saucepan. Let the moisture evaporate.
 
 2. Blend in flour until smooth. Reduce heat to 200°. Add milk and
 blend in sour cream.
 
 3. Bring to a simmer. Add soup and 1/2 cup hot water, whisk thoroughly.
 Add additional hot milk if needed to control thickness. Blend in cheese,
 make sure cheese is thoroughly melted. Bring to a simmer, add wine.
 Blend well and add pepper, cayenne, oregano, and thyme.
 
 4. Simmer to desired thickness.
