      title: creamy-smooth horseradish sauce

     1/2 c  water
     3/4 c  fresh horseradish
       3 t  unsalted butter
       2 t  flour
     1/2 c  white stock
     1/2 c  milk
       1 t  sugar
       1 t  kosher salt
       2 t  white wine vinegar
     1/4 t  white pepper
     1/2 c  sour cream
 
 combine the hot water and horseradish
 allow to stand for 5-10 minutes, drain well, and set aside heat the
 butter in a saucepan, over a medium flame 
 whisk in the flour, heat and stir until bubbly 
 stir in heated stock and milk
 heat and stir until thickened slightly 
 add sugar and salt
 heat and stir over a low flame for 5 minutes 
 add horseradish, vinegar, and pepper
 simmer for 10-12 minutes 
 remove from heat 
 stir in sour cream 
 serve warm, at once
