       1 t  creole seasoning
     1/4 c  unsalted butter
       1 c  tomato concasse
     3/4 c  onion
     3/4 c  celery
     3/4 c  green or red bell pepper
       1 t  garlic
       1 c  chicken stock
       1 c  tomato sauce
       1 t  sugar
     1/2 t  liquid hot pepper sauce
 heat butter in a saucepan, over a medium flame 
 add tomato concasse, onions, celery, bell peppers, and garlic 
 stir in seasoning mixture 
 heat and stir for 5-6 minutes, until onions have softened 
 add stock, tomato sauce, and sugar-mix well 
 add pepper sauce to taste 
 simmer for 20-30 minutes, over a low flame 
 serve warm
