                            Summer Tomato Sauce

   Amount  Measure       Ingredient -- Preparation Method

    6      each          plum tomatoes -- cut 1/4 ddice
      1/2  cup           black olives, pitted -- coarsely chopped
    3      each          scallions -- sliced
    1      clove         garlic -- finely minced
                         salt -- to taste
                         freshly ground black pepper -- to taste
    8      whole         fresh basil leaves -- slivered
      1/4  cup           olive oil
      1/2  pound         penne, ziti or fusilli pasta -- cooked al dente
 
 In a large bowl combine tomatoes, olives, scallions, garlic, salt, 
 pepper and slivered basil.   Gently toss in the olove oil.  Let rest,
 covered for at least 2 hours for flavors to develop.
 To serve, toss the cooked pasta into the prepared sauce and serve at
 room temperature
