* Exported from MasterCook * Red Pepper Hummus Pockets Recipe By : Easy Vegetarian Meals Pillsbury April 1998 #206 Serving Size : 4 Preparation Time :0:00 Categories : Diabetic Theme Week Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- *** Hummus *** 2 cups cooked chickpeas -- drained & rinsed *1 1 tablespoon lemon juice 1 tablespoon olive oil 2 cloves garlic -- chopped 1/3 cup roasted red peppers -- drained *2 *** Sandwiches *** 8 leaves lettuce 1 medium cucumber -- sliced thinly *3 4 large pita bread, whole-wheat -- halved *1 -- 19 oz. can Garbanzo Beans or Chick Peas or cook you own, make sure that canned are well drained to get the salt rinsed off *2 -- (from 7.25 oz. jar) *3 -- English cucumber are excellent In food processor bowl with metal blade, combine chickpeas, lemon juice, oil and garlic; process 1 or 2 minutes or until smooth. Add roasted peppers; process 30 - 60 seconds or until peppers are finely chopped. To assemble sandwiches, place lettuce leaf and cucumber slices in each pita bread half.
