* Exported from MasterCook * Zucchini Casserole Recipe By : Mom Serving Size : 1 Preparation Time :0:00 Categories : Casseroles Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 cups zucchini -- cubed 1 large onion -- chopped 1 package Stove Top Stuffing Mix (chicken) 1 stick butter or margarine -- melted 1 cup sour cream 1 can cream of chicken soup 8 ounces NY white sharp Cheddar cheese -- shredded Cook zucchini and chopped onion in salted water 10 minutes; drain. Combine Stove Top Stuffing crumbs, seasoning packet, and butter. Mix well and place half of crumbs in 9x13-inch baking pan. MIx together sour cream, cream of chicken soup and shredded cheese; add zucchini and mix well. Spoon atop stuffing mixture in pan. Top with remaining stuffing mixture.
