* Exported from MasterCook * Sweet Potato Casserole Recipe By : Glenda Denham Serving Size : 8 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups sweet potatoes -- mashed 1/2 cup brown sugar 1/4 cup milk 2 eggs 1/4 teaspoon salt 1 teaspoon vanilla 1/4 cup margarine TOPPING 1/2 cup pecans -- chopped 1/2 cup brown sugar 1/4 cup flour 1/4 cup margarine -- melted Mix all ingredients (except TOPPING ingredients) together and pour into a buttered 9 x 9 dish. Mix pecans, brown sugar and flour. Sprinkle mixture over top of potato mixture. Pour melted margerine over the top of the the sugar mixture. Bake 30 minutes at 350*F. - - - - - - - - - - - - - - - - - - NOTES : Freezing instructions: Before baking, separate into desired portions (this is REALLY rich and goes a long way). Freeze. To serve, thaw and heat as directed.
