* Exported from MasterCook * TURKEY FRITTATA Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Poultry Low-cal Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 c Sliced onion 1 Garlic clove, minced 1 tb Oil 1 c Sliced mushrooms 1 c Frozen chopped spinach, dry 2 tb Lemon juice 1/8 ts Ground black pepper 1 c Chopped turkey 6 Eggs beaten Defrost and squeeze spinach dry. Saute the onion, garlic and mushrooms in the oil for 5 minutes. Add the spinach, lemon juice and pepper. Cook over low heat for 3 min. Add the turkey and eggs to the spinach mixture. Pour into a greased 9 inch round baking dish. Bake in 350 F oven for 25 to 30 minutes or until eggs are set.
